More than a Sauce

Sorrel has been valued in Jamaica and across the Caribbean for generations for far more than its flavour. Rich in anthocyanins — the natural compounds that give it its deep red colour — and packed with antioxidants, flavonoids and polyphenols, Roselle Hibiscus has long been part of traditional wellness practices. It has been traditionally associated with digestive comfort, and is widely studied for its antioxidant properties and potential to support cardiovascular wellbeing. Sorrel — known botanically as Roselle Hibiscus (Hibiscus sabdariffa) — is one of Jamaica's most treasured ingredients and one of its best kept secrets. It is not a berry, not a fruit, and not what most people picture when they hear the word flower. What is harvested is the calyx — the deep red, fleshy outer casing that grows and thickens around the green seed pod inside. When fully grown and tightly wrapped, the calyces are snapped fresh from the stem by hand, then carefully deseeded and washed before processing begins. The flavour is tart, fruity and floral — strikingly reminiscent of cranberry, but not a berry at all. Something entirely its own.

Highly seasonal, blooming only in late autumn and early winter and notoriously difficult to store, sorrel is precious. Kountry Delite captures it at its peak so the flavour lasts all year long.
